Mediterranean Chickpea Avocado Wrap💕

Ingredients:
- 1 can (400g) of chickpeas, rinsed and drained
- 1 ripe avocado
- 1 tablespoon of olive oil
- 1 teaspoon of lemon juice
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of cumin
- Salt and pepper to taste
- 2 whole grain wraps
- 1 medium tomato, diced
- 1/2 cucumber, diced
- A handful of fresh spinach leaves
Kitchen Tools Needed:

Instructions:
- In a bowl, mash the avocado and mix in the olive oil, lemon juice, garlic powder, cumin, salt, and pepper until well combined.
- Add the chickpeas to the mixture and gently fold them in until they are coated but still chunky.
- Lay out the whole grain wraps on a clean surface.
- Spread the chickpea and avocado mixture evenly on each wrap, leaving some space at the edges.
- Top with diced tomatoes, cucumber, and spinach leaves.
- Fold in the sides of the wraps and then roll them up tightly from the bottom to the top.
- Optional: place the wraps in a toaster or grill for 2-3 minutes to warm them through and give a crispy texture.
