Ingredients:

  • 1 can (400g) of chickpeas, rinsed and drained
  • 1 ripe avocado
  • 1 tablespoon of olive oil
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste
  • 2 whole grain wraps
  • 1 medium tomato, diced
  • 1/2 cucumber, diced
  • A handful of fresh spinach leaves

Instructions:

  • In a bowl, mash the avocado and mix in the olive oil, lemon juice, garlic powder, cumin, salt, and pepper until well combined.
  • Add the chickpeas to the mixture and gently fold them in until they are coated but still chunky.
  • Lay out the whole grain wraps on a clean surface.
  • Spread the chickpea and avocado mixture evenly on each wrap, leaving some space at the edges.
  • Top with diced tomatoes, cucumber, and spinach leaves.
  • Fold in the sides of the wraps and then roll them up tightly from the bottom to the top.
  • Optional: place the wraps in a toaster or grill for 2-3 minutes to warm them through and give a crispy texture.
