Ingredients:
- 200g of gluten-free flour
- 2 tbsp of coconut sugar
- 2 tsp of baking powder
- 1/2 tsp of salt
- 300ml of almond milk
- 1 tbsp of apple cider vinegar
- 2 tbsp of coconut oil (melted)
- 1 tsp of vanilla extract
- Maple syrup for serving

Instructions:
- In a mixing bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt.
- In a separate bowl, combine the almond milk and apple cider vinegar to create a dairy-free buttermilk. Let it sit for a few minutes.
- Add the melted coconut oil and vanilla extract to the almond milk mixture and mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- For pancakes, heat a frying pan over medium heat, pour a ladle of batter onto the pan, and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
- For waffles, preheat the waffle maker and pour the batter according to the manufacturer's instructions. Cook until the waffles are crisp and golden, about 3-5 minutes.
