Ingredients:
- 2 cups of shredded cooked chicken
- 4 corn tortillas
- 1 cup of enchilada sauce (dairy-free)
- 1/2 cup of diced onions
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- Salt to taste
- 1/4 cup of chopped fresh cilantro for garnish

Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the enchilada sauce over medium heat, stirring in the diced onions, cumin, chili powder, and salt until the onions are softened.
- Take a corn tortilla, fill it with a portion of the shredded chicken, and roll it up. Place it seam-side down in a baking dish.
- Repeat the process with the remaining tortillas and chicken until all are rolled and placed in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well covered.
- Bake in the preheated oven for 20 minutes or until heated through.
- Remove from the oven, garnish with fresh cilantro, and serve hot.
